Description
For a robust spicy flavor add cajun flavor and color to fried, baked or grilled meats, chicken and fish. Mix Cajun Blackened Seasoning into ground beef for cajun burgers. Try a sprinkle of cajun seasoning on eggs or vegetables. Blacken fish by oiling a pan, sprinkling with seasoning and baking, flip fish when done to coat top side. Try our Cajun Spiced Corn Chowder.

Recipe: Cajun Spiced Corn Chowder 2 cups fresh or frozen corn kernels 2 tablespoons extra virgin olive oil 1 onion, finely chopped 1 small celery stalk, finely chopped 1-1/2 teaspoons Cajun Blackened Seasoning 5 cups vegetable stock 1 cup evaporated milk or light cream 1/8 - 1/4 teaspoon Sea Salt 1/8 teaspoon Fine White Pepper Heat olive oil in a large saucepan, add the onion and saute for 5 minutes. Add the celery and saute for another 3 minutes until well softened. Add the corn and Cajun blackened seasoning and mix well. Add the vegetable stock and bring mixture to a boil. Reduce the heat and simmer for 30-35 minutes.
Taste for seasoning and add the sea salt and white pepper to taste. Add the evaporated milk/light cream and simmer until thickened, 3-5 minutes.
You can serve immediately or for a thicker chowder, put a ladle, or so, of soup into a mixing bowl, and using an immersion blender puree until smooth. Pour the blended chowder back into the saucepan and mix well. Ladle chowder into bowls and top with a light dusting of Cajun blackened seasoning. Serves: 4
